KamikazeeGirl’s Culinary Notes: Hainanese Chicken Rice

Inspired by the relaxed weekend that I had today, I decided to cook for my family. My culinary adventure? Hainanese Chicken Rice with chili sauce.

Preparation: Wash whole chicken and scallions.

Step 1: Place scallions and ginger inside chest cavity of chicken. For maximum flavor, you can strategically place small pieces of cut ginger under the chicken’s skin

Step 2: Submerge whole chicken (chest area first) on a pot of boiling water. Boil for 40 minutes. Once cooked, remove from stock and immediately submerge in a cold water bath to halt cooking and maintain crispiness of the skin. Cut into bite-sized pieces.

Step 3: Cook the chicken rice, using the chicken stock, uncooked rice, sauteed garlic and chili paste. Cooking time takes 30 minutes.

Step 4: Prepare chili sauce using 3 tablespoons lemon juice, 6 cloves of garlic and 5 pieces of chili.

That’s Niro, the baby of the family. She likes to eat, as her chubbiness obviously conveys. Niro was waiting for us to get busy so she could steal on the plate of hainanese chicken but we didn’t fell for her pa-cute act.

I loved cooking for the family as they enjoyed the meal immensely. Am now looking forward to cooking another satisfying meal for them. Hmp…paella perhaps?
